Why not just get to 120? I'm sort of the same boat as you. Haven't played since BC and I'm leveling up. Eventually I'd like to get Draenor + Legion flying but I understand it will be a pretty long grind. So why not get 120 and make my character as powerful as possible so I can just AOE one-shot everything?

I do...i have a 120 death knight. It still is THAT fucking hard. I am doing the 11 chapters and suramar and dude...no...just dude...no. I do it for hours on end and dont even dent it like i have never seen anything take so long
And whenever i find something for a quest its like oh its up. Walk up. Oh its down. Walk down. Still dont see it. Run around for hours.
I had to run around for hours just to figure out how to do the quest line in dreanor, watched 4 hours of YouTube videos, asked around on the zone. I eventually had to make a post on the forum. I had a person message me on wow and i had to download addons and it still took me 2 days and they had to help me find it
All of this for outdated fucking quests.... quests... literally the worst part of wow. The shit you just do to get it over with. And they force you to do an extra 5000 to get flying at max level

Ugh... You know, I have done a bit of reading about how to get Draenor flying and some of the goals seemed nebulous at best. Like a bunch of ambiguous shit that maybe made sense if you were grinding the game everyday when it was current but for players now just really awkward. Is there a good guide or something you'd recommend? You're definitely convincing me to sort of scale back my dreams of getting flying. I wanted to get it for better camera angles for really artistic screenshot taking. Which is like... not a very important goal

Maybe i am overestimating it but you basically have to run around every single zone and do all the quest chapters in it and it is fucking HARD. I think you level through the zones on alts you can just do it because the achievements are account wide. So if you hit 90 quest in 2 different zones. And if you hit lvl 90 on another alt do the quest lines in 2 different zones from that one
Its not bad if you dont rush it but i was fucking rushing it and doing both expansions at the same time so its extra hell because i want to start a hunter to do the zones with flying and have all my new alts to be able to do it
And then after that you have to do a rep grind which is really really easy but its just limited on how much you can do a day so you have to wait and you cant grind it out you have to do things daily but they only take like 15-30 minutes

I have a 112 Priest. I boosted a 110 druid on Alliance (that's what I used to main in BC, Hunter in Vanilla) but I doubt I'll really sink any time into that character anytime soon. I've been leveling up verrry slow because I keep getting distracted reading the lore. Been running TSM since day 1 though so I feel like a fairly rich lowbie

illidan is like 99.9% horde at this point. yea x-server is a thing but not so much in the capital city. go stand in stormwind on illidan vs stormwind on stormrage (#1 alliance server) and the difference is extremely noticeable
