How would you progress in any other exercise you dingbat?

add more weight

Taking away weight. The body expects you to add more weight so you do the opposite to confuse the muscles

With other exercises 5x5 is working fine, but for pullups I've stuck with the same weight for week now.

Body will think you are too light and exercise is too easy so it will build muscle to add weight to your body so it will be harder to do pull-up.

How many can you do?
I say you progress the same way you do with ordinary weightlifting. Progressive overload. You can't go max all the time, but you can generally go 70% most of the time and max every now and then.
