I stole some money from my company and I think they're starting to figure it out. the amount i stole was about 21,000 USD over a period of 3 years.
How much trouble will I get in? should I deny it or should i admit it before they prove its me?

I did ye olde Grand Larceny once. The most important thing I learned was admit nothing. Say nothing. Let your lawyer do the talking. They aren't your friends or good people. Apologizing and owing your mistakes in this situation will literally only serve to fuck you.

It's a big company but they didn't have an ERP software. I was basically a mid point for cash transactions.
Now they implemented an ERP software and the back dated receipts issued aren't adding up with the amounts received.
Did you take a flat amount off of each transaction? Was it always with the same vendor and you can blame something like a payment fee they took out? You're probably done for unless it's random amounts. At best you're gonna look incompetent, at worst you're going to jail

There's nothing you can admit to them now that you can't admit to them later through a lawyer, possibly in exchange for pleading to a lesser charge or a reduction in sentence.
