It's a full featured OS on an embedded platform. ios and android are more like embedded OSs and those are 1GB minimum.

The name is misleading. It's a slim desktop version of 8.1. All the applications, games etc. work just fine. If you add all the same functionality to a GNU/Linux distro, it'll use pretty much as much RAM (while having less driver support, shittier compositor etc).

How is it different from LTSC beside driver support? pic related is nearly stock, just disabled a few group policy/services.

It's pretty similar but you probably want to add something like Open Shell Menu, Classic Shell or StartIsBack. LTSB uses more resources than 8.1 Industry Pro, and LTSC uses even more than LTSB.
