look at the prices for those xeon platinums and consider for a moment that they literally cant make enough of those to meet the ever-increasing demand even on their extremely mature 14nm process which is at near perfect yields by now
the real reason 10nm has been delayed for long might actually be that even a relatively small regression in yields would simply not be worth it financially when they are permanently stuck at max capacity

GCN is old, 7nm can't do miracles, but it will definitely allow Ryzen to clock higher, which is neat.
