Again, this doesn't depend on age because it's not that young people are less religious (if anything it's the other way around), but I guess you can divide it into three groups:
Totally secular people who just don't care. We just eat whatever we want, sometimes even eating non-kosher just to be edgy. But naturally, we don't eat as much pork or shellfish as goyim because it's just not part of our regular diet, more like a delicacy.

Then there are pure religious people, for whom it's not a question, of course they don't eat it.

The third group is the interesting one, what we call "traditionals". They care about kosher, but not to the level that the actual religious people do. For a restaurant to be truly kosher, it needs to be closed on Saturday and other high holidays, not serve bread during Passover, separate dishes for dairy and meat, be inspected by rabbis every so often, and a bunch of other rules. For full religious people, all these rules come together, eating a carrot from a kitchen that works on Sabbath is as bad as eating ham. For the "traditionals", they just care about the big things. They don't want ham or cheese burgers, but don't mind if diary and meat use the same dishes as long as they are washed well, and might drive to the restaurant on Saturday, and even be a bit more lenient when overseas because it's hard to find kosher food.
For people like those, you see the kosher "scale". they are more likely to try shrimp or some other exotic meat than pork, because pork carries the symbolic taboo.
