Why are Americans scared of raw meat?
Heme is a molecule found in hemoglobin which gives blood (and by extension meat) its unique flavor. When heated (i.e. cooked) it changes its taste and gives us that yummy meat flavor. If not ... well, you know how blood usually tastes. Hence my question. I don’t know what effect the spices and stuff might have on it though.

Let’s be real for a second here, why are you so butthurt about a regional specialty? It’s not like the vast majority of our meat dishes aren’t cooked. Open your pin-sized horizons a bit some time.
I know what heme is. I just dont think it exists in any significant amount of iron in the molecule to affect the taste. Blood has a lot more salt and glucose.

Well, think again. It is the crucial component to meat. This is also why attempts at imitating meat (e.g. Impossible Burger et al.) had a breakthrough when they started being able to “synthesize” it with genetically modified yeast and add it to their product.
