I don't know how accurate those stereotypes are for younger people, but I imagine they aren't quite as accurate for older generations as a much wider variety of people smoked back in the day.

Yeah, I had Sandeman (?) and it was quite nice, very sweet, very rich. Normally red wine is horribly sour and I'd rather drink beer or spirits than white wine most of the time.
Port seems to occupy a niche in my view between the heaviness of beer and the undrinkability of spirits, but I'm wondering if I went down several grades to own-brand stuff, it would still have that good taste.

That's the sense I used "Gaelicisation" in. To take the English meaning of the loosely applied demonym-surname, and just translate it, rather than having any record for any particular meaning the Gaels gave them. New wine in old wineskins.

But the whole reason they got the name was because Irish society at the time was big on surnames. Just because there's no excerpt from an annal saying "A tribe of foreigners arrived, we have called them the Welsh as that is the country they hail from" doesn't mean it was a recent translation. Most names translated to Irish are basically the same but with some letters swapped out and an O' added at the front, if the Welsh and Walsh had lived in Ireland for centuries separated from the natives like the Normans were before going native then that's the sort of name they'd get since I doubt many of them associated themselves with Wales by that point.
