Depends on what you want, for party Cuba or DR, Riviera Maya was popular few years ago, Peru could be an option if you like pre-hispanic cultures and all that, the only interesting place in Colombia to me could be Cartagena

There are hundreds of interesting places, Cartagena just happens to be the most promoted destiantion abroad. The countryside specifically to me is amazing
