it used to be 米 in chinese too, changed to 美 because the other transliteration became more dominant. North Korea and Japan uses 米, south Korea and China uses 美. Viet call America hoa ky (花旗) because it was the colloquial name for the us in southern China. the character was chosen for the pronounication, not for its definition.

Thing is, there is a gradual trend in both Japanese and Korean for places and countries that previously had Kanji names to be called by either their English or native name.
France used to be 佛蘭西 in Korean, Europe used to be 歐儸巴 or something, I forget the exact characters
The same is happening/has happened in Japanese too AFAIK, the most famous example is 北京 which is now Pekin in Japanese. I think there are some countries like Thailand and Vietnam that used to be referred to using Chinese character names but are now katakana-ized
