Guatemala, Honduras, El Salvador, Nicaragua and Costa Rica used to be a part of New Spain, and later the First Mexican Empire, under the name of "Captaincy General of Guatemala", so while they were a part of us, they had some sort of independence and mostly governed themselves. Costa Rica at that time was the poorest and more sparsely populated region of the Spanish Empire, with hardly any roads connecting them anywhere.
When the independentist movements started in Latin America due to France's invasion of Spain, different civil wars broke out apart from each other; Simon Bolivar in South America (among others), and various independentists in Mexico. However, the Captaincy General of Guatemala remained without much fight, if at all, and the elite of the time decided to secede from Spain without a war.
Later, after a series of betrayals and some retarded decisions by the King of Spain, the elite in the capital of New Spain, in Mexico City, ultimately decided to join the pro-independence forces (despite fighting against it for most of the 10 year long war), and created the First Mexican Empire. Under this new entity, the "Emperor" of Mexico went all the way to the Captaincy General of Guatemala (Guatemala, Honduras, El Salvador, Nicaragua and Costa Rica), previously a part of New Spain for 300 years, to ask them if they wanted to join the newly formed "empire": to which the Central American elites, including the governor of everything, agreed; aside from the ruler of El Salvador. But since it was a minority, the plans continued anyway. However, despite the fact that the elites agreed, there were revolts against the idea and some minor civil wars, that didn't involve the government in Mexico City, broke out in Central America.

Meanwhile, back in Mexico City, true independentists weren't happy with the "emperor" and decided to get rid of him in a coup during the first 2 years, and succeeded. So, after the "empire" was disolved, the new republic of Mexico offered the Captaincy General of Guatemala to decide whether to stay with Mexico or not (now that the "empire" no longer existed).
They peacefully voted to go away (except for the territory of Chiapas, who decided to stay in Mexico), and created their own country: the "Federal Republic of Central America", to which Mexico agreed diplomatically and without a fight. However, much like when they joined the empire, the elites in Central America and the people could never agree with each other in anything and the new country quickly descended into multiple civil wars that broke them into the countries they are today.
There were some minor conflicts with Guatemala attempting to recover Chiapas, and such, but it didn't amount to anything and everyone went on with their lives.

Their entire identities revolve around NOT being Mexico, and that's it.

Belize was made by Britain and wasn't part of the Spanish Empire. Panama was part of Colombia in the 1800s, but the USA wanted to build a canal and Colombia said no, so Americans aided Panamanian rebels if they'd let them build it.
