I have never watched Jordan Peterson videos in any capacity other than curiosity, and never for more than five minutes. I get the gist of him though, and I sort of understand the memes, in that he's basically just saying things that your parents should be. But clearly a lot of people from the younger generation connect with him, because people at that age often do not connect with their parents for whatever reason. So I just don't see what people problem with him is

Every hotel I go to looks different but motels (which are a very yank thing btw) look IDENTICAL.

for me i'm bothered by him on two levels
1. i got on with my parents. i mean, we shouted at each other, argued a lot, the normal teenlad affair, but i also actually did things with my dad like going fishing or helping to assemble furniture, so i don't have that burning need for a father figure. even the extra advice like "cleaning your room feels good" is something i came to myself after coming home from university the first time and remembering just what a state i'd left my room in. because i had a working relationship with my parents, it makes me uneasy to see so many people clearly didn't and need a substitute.
2. his manner of speaking bothers me. maybe it's partially justified by his approach of valuing sincerity, but it's still annoying to have him YELL HIS POINT LOUDLY rather than be slightly humorous with it.

also he seems to have no idea what he's talking about politically but that's par for the course throughout human history so whatever.

I think you're buying too much into his politics. Don't think people watch him for his politics. Think he's more of a father figure. It's possible his anti feminism views resonate with the younger generation of men, so they buy more into his life advice. I just don't see the problem with that, though, because he has pretty sound life advice, albeit somewhat obvious.
