Order it straight from the butcher, make sure you see him ground the beef in front of you, eat it on the same day you buy it, and enjoy heaven after having seasoned it as you like. Usually I do my own sauce with a mix of BBQ sauce, Bearnaise sauce, a tiny bit of ketchup... Whatever I have on hand really. Do add capers though.
You can even add a raw egg yellow on top for extra flavor.

People are icked at the idea of shoving a tube down a bird's throat, but I've seen those geese coming straight to the farmer to get fed this way without any need to restrain them.
Geese and ducks are migrating birds, the "force feeding" is merely taking advantage of their natural instinct to shove as much food as possible prior to migrating.

To be fair, industrial force-feeding is nearly as bad as it's made out to be, but artisanal one is hardly worth getting your panties in a twist unless you're a raging vegan.
Stressed out birds tend to have pretty thick veins inside their livers, and it actually ruins the quality.
I know how nasty those birds can be when they try to defend themselves, and I've seen geese practically run to the farmer when it was feeding time and basically waiting their turn... The tube doesn't actually hurt them, geese and ducks can swallow bigger fishes whole.
Geese are fuckin terrifying 2bh. My grandpa had a bunch of geese when I was a kid. Maybe it was just perceived aggression due to the loud noises they make, but they scared the shit out of me.
They were tasty though.
Geese can be weird: I've known ones that hissed at from across a farmyard before charging and others on a lake with near constant foot traffic that didn't give a fuck if you passed less than a foot away from them. Sometimes they live up to their reputation as hyper-aggressive mini-raptors, and other types, they're as docile as chickens.
Geese seem mean. They'll threaten you (hissing) for not feeding them as much as they want.
