In practice our ships are used to ping target for the American navy so they can shoot them down. Basically extending their range. We save money as we can keep our missiles, and they get extra range.

Any radar can detect stealth, you silly clod. The point is that you will need to get closer to detect it when compared to a non-stealth craft. If the opponent has stealth and you don't, they have a definite advantage to launch their missile salvo and change their vector. You're pushed immediately on the defensive.

You're forgetting the difference in speed. Carriers go 40+kn while diesel-electrics on AIP go barely 10. If they turn on engines while submerged, they'll generate more noise and be more visible to sonar. And even at max speed, they aren't catching a CSG.
