You can simply write 'aiy' as अइ . No need to provide a different alphabet for it as it is a combination of different basic vowls. But if you are gonna use ऐ for 'aiy' then how do you represent the vowel like 'E' in 'Everest'. Maybe Nepali doesn't have this vowel.
