All are Ukrainians. And Kuban folk are also Ukrainians. There are local differences, but all are Ukrainians. If you ask us about who are "true" Ukrainians - then standard ones are Poltava Ukrainians. Lviv people are mostly larping.

The Poltava dialect is literally the standard for Ukrainian, chosen back in the XIX century. Shevchenko, who used that dialect and had the biggest influence among our authors, played a key role in this. Westerners have a different dialect even nowadays. But they chose to opt to Poltavan one as it is the most "clear" one and not Polonised like the western one.
