I live in Florida so I don't have any expertise on summits and the usual amount of wind.

I dunno, my grandmother is from near Aachen, and my father used to go there every few summers. His uncle there for some reason loved Burgundy, and took my dad there quite a bit. Said it had beautiful nature and was one of his favorite things about visiting. That, and German soft pretzels.

Well as far as nature go it's not really wild or unscathed land you'll find, it has been molded by men for millenias
But it is beautiful without a doubt, in the rural countryside kind of beauty rather than the more pristine stuff of mountain ranges. Pretty fucking quiet too, I never slept as well as I did in a 150 souls hamlet with no cell phone nor internet reception, lost in the Nièvre area
The region also has lots of nice woods, unfortunately rather fragmented (uninterupted forests are basically inexistant in western Europe anyway) but very lush and healthy. A project of Burgundy/Champagne forests national park is on the making
The Morvan hills really feel cut off from the outside world, overall 8/10 would visit again
