Also Spain was never really a good mercantile empire, mostly they conquered and took mineral wealth, which caused massive inflation problems. Also they larped as catholics too hard, so they spent way too much on religious wars, and also belgians for some reason. Finally they were conquered by France, which was the death knell for most of their colonial properties

1. They effectively invented hyperinflation before anyone even knew what the hell it was. The New World had gold and silver beyond what anyone had even deemed possible. Prior to it the value of gold and silver (which was literally what money was made of at the time, there was a time when a Pound Sterling was literally a coin made of Sterling silver that weighed a pound) was very stable as there was a limited amount to go around and digging up new gold and silver went very slowly. Then suddenly a fuckhuge amount of gold and silver was dumped into Spain from the colonies. What this meant is that everyone suddenly had a much larger amount of gold and silver to buy the same limited number of goods and services with, meaning everything became more expensive. This disaster, which weakened Spain, contributed in part to the invention of modern economics (to answer the question: what happened?).
2. Relative to its size Britain has/had STUPID amounts of coal. The Low Lands had some decent amount of coal as well, same for Germany. For France it was mostly concentrated in the Northern regions (hence WW1 being so harsh on them, over half of their industrial area was occupied by the Germans due to this) and America had loads of coal by virtue of its sheer size. Southern European countries never had large supplies of natural coal. As such it took them much longer to industrialize.
3. Resistance to the Enlightenment. Napoleon had to drag Iberia into modernity kicking and screaming and by the time of the restoration they fell back into their old ways. That's why they were some of the last in Europe to -for example- outlaw serfdom (instrumental in creating a working class, which in turn is instrumental to industry).
