I don't order coffee so I don't know. I know a lot of businesses lately do this scumbaggy shit of giving you the option to tip even when it is not normal to tip.
Like when you pick up food for instance, some receipts will have a spot for tip even though it is not normal to tip when you pick up the food yourself, etc.

I mean, even in america it is illegal to just not pay someone right? Like by this logic can I hire software developers in American for zero dollars but then have them paid in tips?

Yes but the specialty coffee shops that usually have this type of checkout offer a lot more filter based options like V60 and Chemex etc than you'll find in Europe. It's still minimal work and nothing more than is expected of them so it's stupid to tip. I'm a top soiboi though so I like to go to places like this and most customers I've seen paying have tipped a dollar or two.
No nobody would ever tip at McDonalds and you never tip when you pick up food or go to a store to get it, only when you are eating inside the restaurant and deal with a waiter, or order and deal with a delivery person.
Although one time I was duped into tipping a pretty girl. I ordered food and saw the receipt and it had a big spot for a tip and I was so distracted by this girls beautiful eyes and blonde hair and smile that I tipped her and still remember it to this day.
