I'm flattered, especially coming from a Greek :3 It's hard not to have a rich history given our geographical position. Getting involved in all kinds of shit was inevitable.

I'm not.
There should be a little icon in the top right corner of your browser (i use chrome so it's there) with a square face with two eyes. On here it should display a red box with a "1" on it to show that the plugin is working.
Click this, and scroll down to "extra flags setup". From there you should start on Texas, and have a selection of counties. Since you're from Rowlett, you should select either Dallas or Rockwell county; if there isn't a flag or seal for rockwell i can make one for the plugin at your request.
Rowlett does have a flag, so i'll add it when i get home. It's ugly as fuck, so i'd advise you to try convincing your city to hold a flag contest.

I mean I know a few basics for most Euro countries, but almost nothing about Maltese history. Until recently I only knew that you were invaded by Arabs and that's why you speak a funny language and that there where some Knights.
I wish the Knights of St. john were still in control of Malta. In EU4 if you play as a country which holds Malta and the Knights get kicked off of Rhodes, then you will get an event giving the opportunity to give the Knights Malta, which would give you +100 opinion from the Pope and +50 from the Knights. They are an awesome vassal; their ideas are insane.
I might end up moving to Texas for a while. What's it like there to anyone who's been/lived there?
