Eastern U.S. here. I'm pretty sure our corn is used as animal feed.

Maize is just a startchier less sweet corn.

Actually it's very weird map.
Nobody eat wheat or rye as staple food, you can't compare it with rice. Wheat and rye used for making bread. And in modern world people tends to eat less bread.
Maybe this map just shows the most grown crops.
