Because you can actually tell if a fish was frozen by the taste (slightly bitter) and you need to keep carp in clean water for few days to clean itself so it doesn't taste like a mud.

I fish 200+ days a year and I live in port town in the Maritimes. I do freeze fish when I absolutely have to, I vacuum seal them, but it's a method of last resort.
