Why are Cubans so white genetically?

Cuba used to be very white, but after the revolution most of those whites moved to Florida. Blacks, mulatos and some whites stayed in the island.
The majority of genetic studies only take samples from Cubans in Florida.

Where are the samples from? Selection bias could be a big factor if they're from consumer genomics. For instance, the American Cuban diaspora is probably whiter than the average Cuban, and they may comprise a disproportionate share of the data.

probably Canarian or Andalucian. Also the word you're looking for to describe Eva Mendes is castizo as even as her skin looks fairly tan it's more likely that she's beyond 60% european DNA.

White Cubans ran away to America after the revolution because they were the descendants of the former slave masters who were exploiting the masses.

I've seen mestizos and she looks like one. I mean I guess she could be castizo as well but she'd be pretty dark for one and her facial features look less white than a definite castizo like Jessica Alba.

My cousin visited Havana the last year and told me that most Cubans are mulatos, there are some whites but they're very tanned. People like William Levy or Ana de Armas are almost unexistent.

This desu, obviously the upper classes, similar to what happens in most of Lattin America, were the Batista supporters who fled the revolution in numbers. Even so there's plenty of darkish Cubanos in Florida, they tend to be not as visible because of social stratification and most americans would likely mistake them for Puerto Ricans/Dominicans at a glance anyway.
