Honestly just eat what you feel like but eating healthy overall is much better.
While doing fasts for my meals I do eat to break the fasts I try to stick to very low carb/keto meals. The point of fasting is to keep your insulin low so breaking a fast with a good keto meal with a lot of fat and moderate protein gives you all the nutrients you need while still keeping the spike to a minimum.
Also, when preparing for my fast I ate keto for 1 week prior to get my insulin low and get me more fat-adapted so the transition to fasting was much easier with lessened hunger pains and a more stable mood for the first couple of days where things can go a bit haywire.

No, it speeds up your entry into ketosis and reduces cravings/hunger in some. Just pay attention, if you get lightheaded, stop, or you'll faint.

It certainly doesn't inhibit it.
You're expending more calories by doing cardio than if you sit still, and those all come from your fat.
I think the only benefit of OMAD is in the Insulin, in wich your body becomes more sensible to it
