Fighters' careers are short enough already, nobody's gonna sign up if they're one dirty move away getting blind, sterile or injured to the point of never fighting again. The people who'd sign up for such a thing are not gonna be talented fighters anyway, so it's just gonna be low quality brawls anyway.

Although from a spectator's viewpoint, I must agree, despite being very satisfying to practice, the striking portion of MMA can be incredibly boring (except for the crazy shit that connects). Grappling at such a high level is very entertaining, and takes a ton of skill and intelligence.

I try and watch but a lot of the matches turn into hugfests. I thought there was a rule to stand up fighters if they’re just laying on each other but it’s rarely enforced.
